Beginning with the best grain-fed pork, each ham is carefully trimmed, then hand rubbed with salt, white sugar, brown sugar, sodium nitrate, pepper, sodium nitrite. Our unhurried aging process pulls the seasoning right into the heart of the ham.

Delicious Country Ham

1/6 Sliced Ham Thick sliced bone in consisting of 1/6 hock, butt, and center slices. Vacuum Hocks Hocks or butts cut into 1-1/2" thick bone in pieces. Great for greens and beans. Random weight .65 lbs. to 1 lbs. Sliced Hocks Thick sliced 3/8" bone in, clear vacuum package on both sides. Random weight .60 lbs. to .80 lbs.
Ham Chips Ham trimmings from boning and slicing. Cut into small pieces for convenient use. 11 oz. net weight. Side Meat Dry cured, pepper coated, cut in 4-1/2" squares. Very uniform in size. Great for seasoning. Random weight .65 lbs. to .85 lbs. Ham Fat Fat trimmed from center section of ham. 11 oz, net weight.
Sliced Side Meat Skinless, sliced, ready to fry. Random weight .60 to .75 lbs. Ham Skins Hand trimmed, cut into 4" squares, are packaged with bone guard protection. 11 oz. net weight. Ham Bones single aitch bone vacuum sealed in clear bag. Random weight .50 lbs. to .75 lbs.
