Barley

Another ancient plant of the grass family, barley has served mankind for thousands of years. It has been used for both food and medical purposes throughout history. Most of us have had barley soup and barley leaves are reputed to contain astounding amounts of vitamins and minerals. This list includes potassium, calcium, magnesium, iron, copper, phosphorus, manganese, zinc, beta-carotene, B1, B2, B6, C, folic acid, and pantothenic acid. Barley contains a fiber also found in oat bran and that is reported to reduce cholesterol levels. Barley is often harvested up to two weeks before wheat that allows a lot of producers to be more effective with the planting of double crop soybeans. Barley is a great livestock feed. And we did not even talk about the brew possibilities. What a plant!
